For thousands of years human beings have produced cheeses, the basic technique has hardly changed: milk is mixed with lactic acid bacteria or rennet and heated for up to two hours. The protein coagulates; the milk disintegrates into aqueous whey and solid-flaky ingredients. They are skimmed, cut, molded, and pressed. Fresh cheese can be consumed immediately; all other varieties have to mature.

What additives are allowed?

With small helpers cheese can now be produced beautifully, quickly and cheaply. For example, the dye beta carotene (E 160) can reinforce yellow tones – this is harmless to health. Critical, on the other hand, is the preservative natamycin (E 235), which protects some hard and cut skin from mold. It has an antibiotic effect and is also used in medicines for the treatment of epidermis. Since natamycin can penetrate the cheese up to 5 millimeters deep, the bark should be removed so far. Sodium and potassium nitrate (E 251, E 252), which prevent ripening errors, are permitted for cut and hard cheese. The permitted quantities are considered safe.

What characterize organic cheese?

For organic cheese, additives are taboo. Only milk from cows, sheep or goats may be kept, which is protected according to the regulations of ecological agriculture. They get biological, genetically-free feed and no preventive antibiotics. The production is more traditional – for example, with natural rennet from the stomachs of ruminants. Conventional manufacturers often use laboratory substitutes that are produced using molds or genetic engineering.

How can analog cheese be recognized?

This is difficult. It is often melted on finished products. It looks like cheese, tastes like this, but is made only partially or not at all from milk. Instead, it contains vegetable fats, proteins, water and other additives. That cannot be called cheese, not even cheese imitation. Correct would be, for example, “covering of vegetable fat and skimmed milk”. The manufacturers have the following advantages: They save expensive milk fat and skilled workers; long tire is no longer required.

Which cheese strengthens the bones?

Another benefit of eating cheese is – Each cheese provides calcium that strengthens bones and teeth. But the amounts vary. In fresh cheese there is little calcium, because it is only produced with lactic acid bacteria. And they dissolve calcium from the milk, which then drains with the whey. More calcium is provided by hard and sliced cheeses. They are made with rennet that binds calcium to the cheese. Milk muffins can cover the daily requirement of calcium with 50 grams of Emmentaler to 70 percent, with 50 grams of Gouda in half.

Cheese despite lactose intolerance

Benefit of eating cheese

Many people who cannot tolerate milk lactose from milk can eat ripened cheese without problems. The milk sugar decomposes when it is matured.

Pregnant women, infants, old and immunocompromised people should refrain from using soft and chopped raw milk such as Roquefort. Their defense often is not enough to ward off dangerous pathogens such as listeria and certain coli bacteria. But they can survive in raw milk cheese. It is made from unheated (pasteurized) milk to preserve unique flavors.

Does fat-rich cheese harm the heart?

It depends on the crowd. For long time milk fat was demonized due to high cholesterol and calorie contents. It’s over. Recent studies indicate that its short- and medium-chain fatty acids are beneficial to the cardiovascular system in moderation. In addition, milk fat is very digestible and contains fat-soluble vitamins A and D. Approximately 50 grams of cheese per day are considered healthy, best combined with whole-grain products or potatoes.

Some mold on cheese is wanted and harmless to health. It makes piquant about Camembert and Gorgonzola. Wild mold, on the other hand, can form carcinogenic poisons. Hard cheese, such as Parmesan, can be pruned. That depends on the variety. Good cut and hard cheese have a smooth, wrinkle-free bark, no untypical holes. Ripe soft cheeses emit with finger pressure. But the aroma is only revealed at the cost.

What is fat in dry matter?

Benefit of eating cheese

The Harzer Roller is a typical low-fat pig’s milk cheese.

Fat in dry matter, often abbreviated as “fat in dry”, is a value that indicates how much fat in the cheese would be without water. The dry mass is the only constant on the cheese, which always loses water. Consumers therefore do not need to fear high fat i.t. values. Thus, water-rich food contains 40% fat, but only 12% of absolute fat. Absolute fat content is voluntary. For hard and sliced cheeses it is between 20 and 30 per cent, with the Harzer scooter at very meager 1 per cent.

How can cheese be picked up?

Cheese is best kept in the refrigerator, preferably in original packs and cheese paper (half foil, half paper). It allows the cheese to breathe but does not dry it. An alternative is fresh-keeping foil.

Does it have disadvantages to eat a lot of cheese?

In general, frequent cheese consumption has no disadvantages. Only if you eat cheese in addition to eggs, meat and sausage and lack vegetables and fruits, your cholesterol levels could rise. If cottage cheese and cheese are your main source of food and you eat little other animal food, this is more health-promoting.

Soft and sliced cheeses yield a lot of calcium, even more than curd, milk and yogurt. On the one hand, all the minerals are more abundant, because mature cheese has less water and is almost a milk concentrate. On the other hand, in the production of these types of cheese, the already abundant mineral is already added for reasons of manufacture.

If you are afraid to belong to the 20 percent osteoporosis-endangered women, because this disease has often occurred in your family, do well to become a cheese fan. For how this bone affection affects in the age depends, among other things, on how much calcium the bones in the youth could store in stock.

However, if you are suffering from high blood pressure or migraine, you should only use caution when using very old mature cheese varieties. As the maturity increases, some components of the cheese develop protein components which can increase blood pressure and trigger migraine.

If you have a healthy understanding of the house and do not soak your food in molten cheese, eat nachos every day, or order an extra portion of cheese for your pizza, you can probably avoid the negative effects on your health, the cheeses and benefit from the entire positive, which I have already mentioned here.

So enjoy the taste and get all the benefits that cheese offers you, but with the same awareness that you also devote to the rest of your diet.
